What makes the book sound briliant, and a possible kitchen staple, is that it advocates "whole foods" in the sense that I use the term: fresh foods prepared at home. Knowing some of the science of food preparation -- without feeling inundated by the wealth of knowledge that makes up food science and molecular gastronomy.&lt;br /&gt;&lt;br /&gt;The book is meant to foster menu planning and enjoyable meal preparation leading to meals that taste better simply from having gone to the trouble of preparing them. Like the author I too go through cycles of cooking-and-not-cooking as my motivation waxes and wanes -- this book might give me the direction I need on off days, when all I feel motivated to prepare are carrots and peanut butter. Lunch, yum. =)&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;A huge rift has emerged in the world of nutrition between advocates of "whole foods" and "food science" -- a discipline most of us associate with highly processed packaged foods. Joachim helps to bridge that gap, reminding us that even whole foods -- such as fresh fruits and vegetables, grains and beans, meats, cheeses and eggs -- are processed when we add heat to, season, combine or can them. Should Be on the Next President's Agenda</title><description>Michael Pollan has eloquently written everything I've been trying to say about America's food economy in one qualified and quantified letter to the next President, our &lt;a href="http://www.nytimes.com/2008/10/12/magazine/12policy-t.html?pagewanted=1&amp;_r=4&amp;ref=magazine"&gt;Farmer in Chief&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;He speaks about everything -- &lt;span style="font-style:italic;"&gt;everything &lt;/span&gt;that is wrong with the current agricultural economy in America. He discusses the proliferation of soy and corn to produce "foods" wholly lacking in nutrition. He rails against the same proliferation, accomplished via modern farming techniques, producing vast amounts of pollution and depleted farmland. He speaks about cheap oil and its effect on farming methods and transportation. His ideas on agricultural policy are rational, reasonable, sound and therefore wholly abhorrent to modern farmers and consumers nationwide, because it will mean change and higher food prices. &lt;br /&gt;&lt;br /&gt;But higher food prices are a small price to pay compared to the potential collapse of our economy and national security when our agricultural system fails - as it ultimately will. It is impossible to sustain the current agricultural economy. As more and more of our food is produced or processed overseas, we are losing control over what we are eating and what we are paying for it. Just like the housing boom, &lt;span style="font-weight:bold;"&gt;the Agricultural Bubble is about to burst&lt;/span&gt;. There I found two articles, posted right next to each other:&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.msnbc.msn.com/id/26957675/"&gt;The overweight debate: Healthy and heavy? -- Has science overemphasized the danger of a few extra pounds? &lt;/a&gt;&lt;br /&gt;&amp;&lt;br /&gt;&lt;a href="http://www.msnbc.msn.com/id/26995427/"&gt;Overeating can short-circuit your brain -- Finding could help explain why obesity causes so many illnesses&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;The overweight debate&lt;/span&gt; discusses how &lt;span style="font-weight:bold;"&gt;a person's lifestyle and choices can reduce to insignificant the potential negative health risks of being a little overweight&lt;/span&gt;. As a primary example, the article points to research showing that a few extra pounds alone does not increase the risk for heart disease in otherwise healthy people. I envision myself as one in many releasing a collective sigh of relief at this news -- I exercise, I eat whole foods, I do what I can to reduce stress in my life, but I'm still overweight, I'm reasonable as healthy as any thin person who smokes everyday and eats fast food for every meal. Healthier, probably! Being healthy while maintaining excess weight is a bit like having your cake and eating it too, but why would I have cake if not to eat it?&lt;br /&gt;&lt;br /&gt;Coming after such happy news, &lt;span style="font-style:italic;"&gt;Overeating &lt;/span&gt;is like a punch to the gut. First I had to know: what do they mean by over eating? Binging? Just eating larger portions? This question is not fully answered. According to the article, &lt;span style="font-weight:bold;"&gt;too many calories in the bloodstream causes an immune reaction&lt;/span&gt; against, well, nothing - but over the long-term these reactions &lt;span style="font-weight:bold;"&gt;lead to diabetes and (you guessed it!) heart disease&lt;/span&gt;.  &lt;br /&gt;&lt;br /&gt;Ultimately, the lesson is that &lt;span style="font-weight:bold;"&gt;it's not how much you eat, it's what you eat and how you eat it&lt;/span&gt;.  Feast on whole foods freshly prepared. Space it out. Chew thoughtfully. Enjoy your food, and by no means rush your meals. When you feel full, stop eating, and don't eat again until several productive hours have passed. Live a happy life. Saccharine, while legal, is disgusting. Honey is great in hot coffee, but is a bottom-sticking dud in a cool iced beverage. Plus I miss my lait... my cappuchinos, my lattes! &lt;br /&gt;&lt;span style="font-weight:bold;"&gt;&lt;br /&gt;Solution: Coconut Milk Lattes!!!&lt;/span&gt;  Thank God Again for the convenience of the Magic Bullet Blender and the Pleasure of a Latte.  It's true that they must still be served hot, but having something, ANYTHING approximating my old beloved lattes is like water to a drought. So good... so simple...&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Make coffee - whatever kind you like. Espresso, weak drip, whatever. Just remember that if you're on SCD, you kinda sorta really should go with half strength to weak.&lt;li&gt;Put honey in the bottom of a mug and add hot coffee to half full. If you're unsure how much honey to use, melt it in the coffee, taste, add a little more and repeat to taste. Since I use a blender and know what I like, I just squeeze it in and let the machine do its work!&lt;li&gt;Add coconut milk to the top and stir/blend.&lt;/ul&gt;&lt;br /&gt;&lt;br /&gt;Ahh... I can enjoy my frothy caffienated goodness again. The ADA receives funding from lobby groups the same way Washington does: &lt;span style="font-style:italic;"&gt;Major &lt;/span&gt;processed foods manufacturers and distributors, including McDonalds and PepsiCo, are among the ADA's &lt;span style="font-style:italic;"&gt;major &lt;/span&gt;monetary contributors, sending hundreds of millions of dollars worth of incentive to continue preaching the &lt;span style="font-weight:bold;"&gt;S&lt;/span&gt;tandard &lt;span style="font-weight:bold;"&gt;A&lt;/span&gt;merican &lt;span style="font-weight:bold;"&gt;D&lt;/span&gt;iet every year. And the ADA contends to teach people to be healthy?&lt;br /&gt;&lt;br /&gt;Joshua said in the e-newsletter that he realized that McDonalds and Co. had all rented booths at the convention... and so could he. Not only that, his booth for IIN, advocating a holistic approach to health counseling and a whole foods diet, is right next to the booths for both Mickey-D's and ConAgra!&lt;br /&gt;&lt;br /&gt;Go Joshua Go!!! Now is the time to prove that IIN's approach to health and nutrition is more than legitimate, and put those corporate fakers in their shameful place. Burger Salad!</title><description>&lt;b&gt;I have officially lost 18 pounds in 3 months,&lt;/b&gt; all since going gluten free and starting SCD.  Whoo hoo!  Life is good.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Unexpectedly-Delicious Burger Salad&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;The E.P. and I eat frozen burgers regularly.  They're cheap and easy, and generally come out pretty well in the toaster oven.  Once-a-week burgers get old after a while, though, and we're constantly trying out new ways to dress them up (without buns and all that nonsense. ;)&lt;br /&gt;&lt;br /&gt;Last week, we tried yet another experiment that could have gone horribly wrong... but came out amazingly good!  I'll call it...&lt;br /&gt;&lt;i&gt;&lt;b&gt;'Dublin' Cheese-Burger Honey-Mustard Salad&lt;/b&gt;&lt;/i&gt;&lt;br /&gt;Layer in a bowl:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;A mess o' greens (Spinach or mixed is always best! Romaine will do in a pinch)&lt;br /&gt;&lt;li&gt;A handful together of onions, carrots, bell pepper and other salad additives chopped or diced to your liking&lt;br /&gt;&lt;li&gt;A small roma tomato or several heirloom cherries, chopped&lt;br /&gt;&lt;li&gt;A fully-cooked, ready-to-eat burger&lt;br /&gt;&lt;li&gt;1/4 cup of grated Dubliner cheese. Dubliner really made the dish!&lt;/ul&gt;&lt;br /&gt;Dressing:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;a TB or 2 of olive oil&lt;br /&gt;&lt;li&gt;The same amout of white vinegar&lt;br /&gt;&lt;li&gt;Several good shakes of powdered mustard&lt;br /&gt;&lt;li&gt;One gentle shake of ground cloves&lt;br /&gt;&lt;li&gt;Honey to taste&lt;/ul&gt;&lt;br /&gt;Shake it up and drizzle on top!  Voila! That's just how it is. One day recently, I made yet another batch... but desired something a little different!  Something a little more... scrumptious.&lt;br /&gt;&lt;br /&gt;Enter orange.  This batch was made with orange zest and freshly-squeezed juice, straight from the fruit into the batter.  It made the mix nearly too runny!  But the results were right on the money.&lt;br /&gt;&lt;br /&gt;&lt;i&gt;Right: Runny orangey batter. Left: It's Franken-Muffin!!! Requiring 2-3 hours to make, the sauce less so - yet it's a new staple in our kitchen since we simply can't live without good pasta  sauce (even if I can't have pasta).  We put it on so many things!  And I think I may have previously mentioned that the sauce is great cooked down into pizza sauce for pizza burgers.&lt;br /&gt;&lt;br /&gt;Making the sausage was a lot like making the breakfast sausage, except that the recipe makes less of it at one time.  Working with less meat means less time kneading in the spices, and less time packaging it all up for the freezer.  So I definitely liked that.  =)  This sausage is cooked crumbled, though if I knew how to put it into a casing, I'm sure I could.&lt;br /&gt;&lt;br /&gt;The sausage was pretty good!  We've since learned that frozen, defrosted sausage is a bit spicier (in a good way).  This will definitely be something I make regularly - ever month or so, especially since on SCD, there's basically no storebought sausage I can eat.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;Right: The finished product tastes better than it looks. It gets pretty boring, but the memory of how awful I felt after I ate just about anything before is a HUGE source of motivation.  Huge.  Especially since my symptoms has dramatically improved.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Expected Consequenses&lt;/span&gt; I haven't really lost any weight in a month, but that's OK because I'm building energy and strength!!  I am capable of accomplishing so much more in one day that I was before.  I can work hard, get some sleep, get up and manage to do it again the next day.  Incredible!  Such a positive change.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Unexpected Consequenses&lt;/span&gt; There's been one surprising reason why I haven't lost weight -- it's shifting, and I'm gaining it in some places.  Like, um, my chest.  I've always been oddly shaped up top -- what of it there was to shape, anyway!  Over the past 2 months, my boobs are noticeably bigger, by nearly a cup if not a whole cup. Although I've been to the &lt;span style="font-weight:bold;"&gt;L&lt;/span&gt;ight &lt;span style="font-weight:bold;"&gt;O&lt;/span&gt;f &lt;span style="font-weight:bold;"&gt;T&lt;/span&gt;ruth &lt;span style="font-weight:bold;"&gt;U&lt;/span&gt;niversal &lt;span style="font-weight:bold;"&gt;S&lt;/span&gt;hrine before, I wanted to share it with my husband and to renew myself spiritually, as it's the most loving place I've ever been.&lt;br /&gt;&lt;br /&gt;This particular visit has inspired me to learn more about Sri Gurudev, who founded Yogaville, and the Yoga principles he espoused.  I'm very pleased to learn that although he practiced Hindu, his method of Integral Yoga is not tied to any particular religion but embraces religious diversity.  Integral Yoga practitioners are Christians, Buddists, and Jews among others, and interfaith services are a particularly cherished part of this tradition.&lt;br /&gt;&lt;br /&gt;I wanted to share with you &lt;a href="http://www.swamisatchidananda.org/docs2/lotus_aim.htm"&gt;this article about the LOTUS&lt;/a&gt; written by Sri Gurudev (who passed on in 2002).  He speaks of a vision for the world that I've been dreaming of for years.  He says exactly what I've been thinking and wanting for myself and everyone.  Maybe this is ultimately the spiritual tradition I will join (as I'm no longer motivated by traditional Christian worship, outside of the High Holy days.)&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;The idea behind LOTUS is not to have all faiths merge into one. If there is only one kind of flower in the garden, it's no longer a garden. Should the flowers fight about their colors, their scents, their shapes, and forms? Should they hate each other for their differences? We seem to appreciate the variety, texture, shapes, and scents of the flowers as they blend together to create a beautiful bouquet. In order to save money and keep true to SCD, we'll be picnicing the whole day!  This recipe for three mini-loaves, from Lucy's Cookbook, I've made to accompany lunch tomorrow -- and to slice up and toast for crackers on Tuesday (Mmm... Wine, good brie, and flour-free crackers!)&lt;br /&gt;&lt;br /&gt;This recipe actually came out tasting &lt;span style="font-weight:bold;"&gt;quite gourmet&lt;span style="font-style:italic;"&gt;&lt;/span&gt;&lt;/span&gt;!  It has the weight and consistency of really good bread, cuts well, and tastes like something from a hip modern restaurant.  This is definitely a recipe to make again.&lt;br /&gt;&lt;br /&gt;Some notes on how I made this recipe:&lt;br /&gt;~ My almond flour hasn't come yet, so I ground them up myself, per usual until my order finally gets here.&lt;br /&gt;~I "finely chopped" a cup of real parmesan using the &lt;a href="http://www.buythebullet.com/"&gt;Magic Bullet&lt;/a&gt; blender.  It made a fine powder of the cheese, much like storebought grated cheese, but so much fresher!&lt;br /&gt;&lt;br /&gt;BTW, the Magic Bullet really is the best kitchen tool ever (even if its name still makes me laugh...)  I use it every day, and my food processor at least every other day (and often more than once a day for both.)  Ahh, celiac disease, thou hast made a foodie of me....&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;Right: Doughy-pans ready for the oven. After a couple weeks stagnation, I appear to be starting to lose weight at a significant pace again.  Very exciting indeed!  My energy is still much better, my brain is working better, and my body in general is operating at a much higher level than it was just 2 short months ago.&lt;br /&gt;&lt;br /&gt;The E.P. made a wonderful new recipe this week: Pizza Burgers.  He cooked down some of our SCD-legal homemade Italian sauce and covered the burgers with it, then grated fresh cheddar on top.  Simple, fast, and SO YUMMY.  &lt;br /&gt;&lt;br /&gt;I had an allergic reaction yesterday, either to radishes, pears, or feta cheese (it was on my salad but I tried to pick around it - Feta is not SCD legal.) I think it was the pear, sadly. The mix is similar to many SCD and gluten-free pastry recipes: the primary ingredients consist of blanched almond flour, baking soda, salt, butter and eggs.  Between SCD muffins, cookies and cakes, soon I will be a master at folding stiff egg whites into mounds of nutty goo!  &lt;br /&gt;&lt;br /&gt;This cake is flavored with cinnamon, nutmeg, walnuts, and of course: Rich roasted coffee from my Italian stove-top espresso maker.  It is wonderfully tasty.  I baked it for 34 minutes but I could have left it in for another 2-3 minutes, as the center was still a bit moist.
