Awesome, awesome, awesome! Whole Foods Pulls Through with Great Mussels Recipe

YUMMY! Recently I picked up at Whole Foods a brochure of theirs titled Meals for 4 under $15. I thumbed through, thinking it might be good for at-home date nights, and found only one recipe worth trying. And it is Awesome!!!! So good, we invited a couple friends over spur-of-the-moment to help eat up the leftovers - it was too good to let go to waste. =)

Classic Cioppino

1 TB Olive Oil (we used organic extra-virgin!)
3 slices bacon (natural, organic, uncured)
1 yellow onion (organic if ya got it)
2 cloves garlic (organic if ya got it)
1 28 oz can diced tomatoes (365 Organic from Whole Foods)
1 32-oz carton veggie broth (organic, low sodium)
1 12-oz package cod fillets, cut into bite-sized chunks (from Whole Foods - Alaskan)
1/2 lb mussels, washed (OK, they only sell 2 lbs at a time right now, but for only $3.50 a bag!!! Now what do we do with the rest?)
1 TB seafood seasoning ;)
2 TB chopped fresh basil

Heat oil and bacon over medium-high heat in a large saucepan until bacon is cooked but not crispy. Add onion and garlic & saute until soft but not brown, about 5 mins. Add tomatoes & veggie broth & simmer 20 minutes. Add fish, mussels and seasoning. Simmer 10-15 mins longer or until fish flakes easily when tested with a fork and mossels are open. Be careful not to overcook. Ladle into bowls and garnish with basil.


I'm typing the recipe out here because it's not available online at this time. I can highly, highly recommend this one. Mussels are so affordable right now, I assume they are in season?
