To simplify this blog, I'm going to change up the left-side bar to feature a list of the books I'm using for recipes right now, plus links. That way when I write about a recipe, I'll just refer you to the link on the left for more info.
In the meantime, here are the Latest Awesome Whole Foods Recipes I've Tried and Loved. Please note that I do occasionally use canned beans and tomato products -- I look for those without additives, but in the interests of not going totally insane, I will compromise a teeny bit on this.
- From The Everything One-Pot Cookbook
- Easy Lentil Cheddar Casserole, p.4 -- This simple recipe requires a lot of cook time. The ingredients look mundane but it's surprisingly yummy.
- Vegetable Lover's Fried Rice, p.12 -- AWESOME, a meal in itself! If you double the recipe, be sure to use a dutch oven or a large wok, otherwise you'll have overflow all over the stovetop.
- From You Are What You Eat
- Tabbouleh, p.88 -- This is an incredibly fresh, quinoa-based tabbouleh. Far better than what you can buy in the grocery store. The protein in the quinoa makes it filling!
- From The Healthy Hedonist
- Mujadarrah and Middle Eastern Salad, p.210 -- This mujadarrah recipe (lentils/rice/onions) has become a staple in my house. It's some type of soul food, I swear. I haven't made the salad lately but it is very good. The mujaddarrah pairs well with:
- Cauliflower, Green Bean, and Mushroom Kuku, p.234 -- This crust-less, quiche-like veggie pie is delicious! I used dried herbs and it was yummy, although I'm sure it would be spectacular with fresh herbs as the recipe specifies. Next time!
- From Better Homes and Gardens New Cookbook (Ltd Ed)
- Chili, p.492 -- This is a wonderful, easy and quick recipe for chili! Substituting sweet red peppers for green bells makes it even zestier. A real family-pleaser!
- From Recipe Source (website)
- Orange Cinnamon Coffee -- Delish! I added a touch of pure dark cocoa powder, and added half-n-half to the final product. I'm just glad to have some type of flavored coffee after giving up all sweeteners. Plus, the orange used for zesting becomes a handy sweet snack! =)
